Almonds are high in calcium! Tomatoes are packed with antioxidants to keep you looking younger. This protein packed dish will keep you fuller for longer.
Ingredients:
4 white fish fillets
400g can diced tomatoes or 2 cups diced tomatoes
1 bunch parsley, chopped
1 lemon, peel finely grated
1 garlic clove, finely chopped
1 tsp paprika, ground
2 tbs oil
50g slivered almonds
Directions:
Preheat a oven to 180 C.
In a bowl combine tomatoes, parsley, grated lemon rind, garlic, paprika, oil and almonds. Place fish in an ovenproof dish and top evenly with tomato mixture. Bake in the oven for 20-30 minutes depending on how you like your fish cooked. I prefer mine just barely cooked but its up to you! Serve with vegetables or salad.
