Make Healthy Style Mayonnaise

Having a BBQ later ? Make some tasty choline rich and good fats mayonnaise for all you gym fanatics to complement it. You can add herbs or spices to it such as cumin or cayenne pepper to give it that extra zing. My favourite is chilli, fresh coriander and squeeze of lime. Be creative you can add almost anything you like. Mayonnaise that you buy in the Supermarket is likely to be full of additives and all the wrong fats. Make your own mayonnaise, it is so easy just follow my guidelines carefully.
2 egg yolks
200ml oil
3 tsp lemon juice
Pinch of Sea Salt
Place the egg yolks, salt, lemon juice and your chosen spices/herbs in a bowl. Using an electric beater pulse until the mixture has slightly thickened.

Keep the electric blender running and slowly add the oil drop by drop. This will take a few minutes – don’t rush the process as the oil may start to separate from the egg.

When all the oil has been added, add more sea salt or lemon juice to taste. Cover and refrigerate for up to 5 days. Stir before serving.
